The mulled wine recipe that will make you forget every other one

It seems to me that one thing in this wild holiday season stays the same, steady, almost unchanged, and that is the need to enjoy a good mulled wine. The search for the perfect recipe begins the moment the advent lights are switched on, continues throughout December, and once you find it, you put it somewhere safe and return to it every winter.

This time we headed to Simon Rogan’s Michelin restaurant, the genius who turns everything he touches into gold, including the restaurant in Malta we wrote about recently. One of his successful restaurants, the Michelin starred Rogan & Co, is located in the picturesque medieval English village of Cartmel, and in addition to an exceptional dining experience, it also offers accommodation. The restaurant’s head chef, Tom Reeves, told us that every guest who decides to stay overnight is welcomed with their house mulled wine, a recipe he created together with Simon Rogan. 2 bottles of red wine
1 orange studded with 6 cloves
2 lemons, sliced
2 oranges, sliced
1 cinnamon stick
2 tablespoons freshly grated ginger
6 tablespoons honey
10 tablespoons icing sugar
10 cardamom pods
3 tablespoons Grand Marnier
Place all the ingredients in a pot and heat gently, making sure it does not boil. Cover and leave the mixture to infuse for 24 hours. Strain, reheat, and serve.
